Re-Define Cocktail Menu

Re-defining classic cocktails is all the rage and a movement we typically get behind. Then we found ourselves in a conversation with a mixologist much smarter than us.

Their take was that classics are classics for a reason but that alone doesn’t make them great to drink today. It also doesn’t make them any more valuable than a delicious libation someone painstakingly crafted last week.

After a little back and forth and several tastings, we conceded the fact.

That very conversation would come up again as we were deciding the name of our spring capsule. After all, re-defining something doesn’t steal anything away from what was there before, it just means it’s time for a new twist on an old take.

Enter this cocktail menu crafted by Rachel Dancer of Henry James. And if Rachel's gorgeous face looks familiar to you, it's because she also obliged us by being a part of the Re-Define collection shoot. We love this menu because it feels like meeting Rachel. The drinks are subtly complex, and while adhering to the basic cocktail rules of a delicious base note, complimentary aromatics, and hidden complexities that keep you guessing, this list has something new to discover with every sip.

The Martinez

The cocktail world owes a lot to The Martinez and we thought it a great place to start. This modern take on the classic will feel familiar with a fresh touch of danger.

  

  •  2oz Hayman's Old Tom Gin
  • 1oz Dolin Sweet Vermouth
  • Bar Spoon of Luxardo
  • 2 dashes of Orange Bitters
* Mix all ingredients, stir, serve up with a lemon twist.

The Revival

Three ingredients never tasted so complex or satisfying. We can see the Negroni drinkers shaking their heads now but trust us here. The star in this glass is the Montenegro. It’s the perfect spicy, bitter, herbaceous and floral match for the attention the mezcal is demanding.

  • 2 oz Mezcal
  • 1 oz Montenegro Amaro
  • 1 oz Blanc Vermouth
* Mix all ingredients, stir, serve on a big cube with a lemon twist.

Susan Vega

This sweet libation is everything we need for the summer of 2022. The Chartreuse brings the perfect blend of sweet, spicy, and smooth to a sultry summer party. Much like Vega’s deep-cut Caramel, this cocktail encourages one to dig deeper than just Luka.

  • 1.5 oz Gin
  • 3/4 oz Green Chartreuse
  • 1.5 oz Pineapple Juice
  • 1 oz Lime Juice
  • 1 oz Basil Simple Syrup
  • 2 Basil Leaves
* Combine all ingredients into a shaker, strain over ice, garnish with Basil Leaf.

New York Sour

If you ever order a whisky sour from Rachel, this is what you’ll get. A fact we love! This magical concoction is not only delicious but beautiful. Another fact we love! Also, the perfect reason to add this libation to your rotation for when friends are coming over.

  • 2 oz Bourbon
  • 3/4 oz fresh lemon juice
  • 3/4 oz fresh lime juice
  • 3/4 oz Agave
  • Red wine floater
* Combine all ingredients into a shaker, strain over ice, top with a red wine floater, garnish with a cherry.

The Rosie

“Rosé all day” has a whole new meaning. Also, for god’s sake don’t try to drink these all day. We care too much about you! We also promise that one or two will more than do the trick.

  • 1.5 oz Reposado Tequila
  • 1/2 oz Aperol
  • 3/4 oz fresh Lime Juice
  • 1/4 oz Simple Syrup or Agave
* Combine all ingredients into a shaker, strain over ice, top with soda water, garnish with orange slice.
